Salad recipes:
Reverse engineered from the ones you buy at Nob Hill

Texas Caviar, black eye pea salad.
1 pack black eye peas, 1lb, use 1/2 a pack or 1/2 lb
1 onion, dice
2 roma tomatoes, or 1 big organic heirloom tomato
italian salad dressing, you can make your own using olive oil, vinegar(balsamic or rice), italian seasoning mix(basil, oregano, etc..), onion powder, garlic powder, dried bell peppers, salt, sugar(I leave out the salt, sugar)
dash pepper
1 lemon, lemon juice
3 stalks celery
1 jalapeno
1/2 green or red bell pepper

Mix, let sit overnight to meld flavors. This salad holds up the best because the acidity from the vinegar doesn't change the texture of the veggies. The crunchy ones stay crunchy and the mushy ones like the beans don't get mushier.
Add coleman's dry mustard for more kick.

2) Crunchy Salad
this is one of their more popular salads.
Broccoli: par boil this, <60 seconds. Boil water, put broccoli in for 30-60 seconds. It will turn dark green. It should still be crunchy and not taste raw. You have killed E. Coli in this step from the picker's hands who don't have toilet paper available in the fields.
carrots: peel slice and parboil.
zucchini, important to slice where you leave he peel in a 1/8 inch strip, this keeps part of it a bit hard so the vinegar doesn't dissolve it. The flesh part of the zucchini where there is no skin will have a different texture.
Cucumbers with skin on. Use the hothouse plastic skinned one.
Tomatoes: the juice from the tomatoes will add to the marinade sauce. Use as fresh as possible
Baby corn: parboil to remove canned taste
Peppers; use some sort of hot pepper or grind up some dried ones
Mix salad, add lemon juice, pepper, red wine vinegar, olive oil. No sugar/salt necessary.


3) whole wheat pasta garlic spinach recipe
1 box whole wheat pasta
1 small bag frozen peas
1 bunch parsley
1/2 c mayonaise(gross if bought from the store, you have to make your own or leave it out)
2 handfuls of garlic, dice fine
parmesan cheese

cook pasta, peas, mix. add salt if necessary. should taste garlicky and creamy in equal parts. I modified this recipe, remove the mayo sauce, add cooked fava beans, cooked spinach to the pasta, serve this salad hot. cold mayo garlic spinach salad is too creamy for my taste.

4) Turkey/chicken salad
1 turkey/chicken breast
2 stalks celery
1/2 red onion
mayonaise, 1-2/1 cup
pickles
black/white pepper
sugar to balance flavors if it isn't in the mayonaise already. Should taste crunchy, salty, sour from the pickles with a crunchy texture from the celery and pickles. Some tabasco or chili powder would work. I didn't like this so much because of the mayo.
